Cassava is a root vegetable and resistant starch. Not only are you enjoying the taste, you're also getting some fiber for gut health! They are also grain free, contain no processed sugar and are very simple to make!
- 1 cup cassava flour
- ¼ cup raw cacao nibs
- ¼ cup coconut oil
- 1 egg
- 1 tsp baking soda
- 1 tsp sea salt
- ¼ cup pure maple syrup
- ¼ cup almond milk
- Preheat oven to 375 degrees.
- Mix dry ingredients in one bowl. In another, mix wet ingredients.
- Combine together and form into cookies on a baking sheet. Bake for 8-10 minutes or until cooked through.
